"VISCERA CUTTING: Innovative system for the multi-cutting process of viscera in slaughterhouse and reduction of water consumption".

Project approved for the AEI 2023 line of support

The meat sector is the fourth most important industrial sector in the territory. Optimization of the processes involved in slaughtering and processing of the products obtained is vital for increasing the competitiveness of the sector. One of the key points is to be able to combine productivity with savings in resources, both energy and water, improving the working conditions of the workers, without losing the quality and food safety of the products.

In this context, the main need of the project arises which, in turn, is the main objective: to carry out an industrial research project to design a prototype to automate the large intestine cutting process in slaughterhouses, by means of a multi-cut viscera system that reduces the water consumption of the process. It is important to point out that the prototype to be investigated is not similar in the market.

This project also has the following objectives:

  • Reduce the risk of cross-contamination in the production process at the slaughterhouse, increasing the food safety of the product.
  • Increase occupational safety: reduce the noise generated by the casings at the time of cutting, look for safer alternatives for the cutting of large pig intestines, and reduce the repetitiveness of the operator's tasks.
  • Eliminate a manual and slow process for a more optimal and controlled one.
  • Reduce human error in large intestine cutting measurements, consequently reducing resources.
  • Reduce water consumption both in the process of cutting the large intestine in the slaughterhouse and in its cleaning.

It should be noted that this is an inter-cluster project, where INNOVACC (coordinator) and the Catalan Water Partnership (CWP) cluster will work to disseminate the project among its members in order to provide tools to improve the competitiveness of the sector.
